Buñuelos crujientes de judias de careta y gambas secas.

Exotic beans crispy fritters facepiece and dried shrimps , fried in oil dendé . It is an African- Brazilian dish special from Bahia , where  are cooked in the street by women with typical white  dress with traditional decoration ,scrupulously clean with bright necklaces . On the streets of Ghana and Nigeria are also found those. The same mixture wrapped in banana leaves and steamed called  abara.

 225 g of beans soaked facepiece and wiped away from the eve

1 small yellow onion , finely chopped

2 tablespoons dried shrimp

salt to taste

dende oil for frying ( or vegetable)

Drain the beans and peel the skin , soaking takes time but facilitate the operation.

Place in the processor bowl the shelled beans , onion , prawns and a little salt , reduce the whole to a homogeneous mixture . The Brazilian dried shrimps are very salty . You must obtain a preparation halfway between a mass and a pasta. If you use Chinese shrimp , you will need more salt.

Heat oil in a deep skillet . Put a walnut of the above mixture into the hot oil and frying in batches go for the oil temperature does not drop . Be ready in 3-4 minutes. Transfer them with a slotted spoon to paper towels to drain .

To prepare large fritters , form a kind of pancakes the size of a butter dish and gently drop them into the hot oil . Give them a turn and fry for 7-8 minutes in total . Serve with a little allspice sauce.
