Cau Cau

Another traditional dish of Peruvian cuisine is the cau cau . Can digustar with chicken and even fish, the traditional recipe and consumed every day in thousands of homes is that of cau cau mondongo , ie it is made from the belly of the animal.
 
Ingredients
 
2.2 lb. of diced potatoes
 
 1 tablespoon of oil
 
1.6 lb of diced tripe
 
1 onion, chopped
 
1 teaspoon crushed garlic
 
1 teaspoon ground cumin 
 
1 teaspoon ground pepper 
 
1 teaspoon stick flush
 
 chopped mint
 
4 tablespoons red pepper yellow
 
 salt
 
½ cup water
 
 
 
Preparation:
 
Wash the tripe get all the fat and boil it in a pot with water to cover it with a sprig of mint (unsalted) chopped onion fry apart cumin , pepper, garlic, aji mirasol chili ground yellow or stick , salt.
