Chupe de Maní

This is a simple soup popular in Ecuador and Bolivia. Peanut butter can be used fine if you do not grind your own peanuts.
 
 
2 tablespoons of peanut oil
 
1 onion
 
1 patato peeled (diced).
 
1 red pepper finely chopped
 
2 dried red pepper, seeded and chopped.
 
4 tablespoons finely ground roasted peanuts
 
salt and pepper to taste.
 
2 tablespoons chopped of cilantro
 
1 tomato, diced
 
Add extra peanut 

 

Preparation

 

Preparation: Heat up the oil in a pan. Fry the onion, potato and bell pepper until they are wilted, but without any gristle. Add the chile and pour the broth. Bring to a boil, lower heat and simmer 20 minutes, until the soup this fragrant and well amalgamated. Reduce half of the soup pureed in the blender with the peanuts and mix it with the rest. Scouting, reheat and serve in soup bowls. Garnish with coriander leaves, tomato and chopped peanuts.
