Estofado Argentino

Homemade dish is cooked in a bigcontainer with vegetables, flavorings and strong wine . If iis possible , cook it in the oven at a minimum temperature and it going to get a better taste and inthe next morning you will see the most succulent awarded esofado ever tested
ingredients:
2kg beef round
900 g of carrots
110 g of finely chopped parsley
4 cloves garlic, finely chopped
4 tablespoons oil
450g peeled onion tender
few sprigs of thyme and oregano
1 bay leaf
1 bottle of strong red wine
a pinch of sugar
salt and pepper to taste
3-4 red and yellow peppers , seeded and chopped
900 g new potatoes scraped (or ripe , peeled and chopped )
Preparation
Using a sharp knife , do a cut along the center of the round and end to end . Grate a quarter carrots and mix with parsley and garlic paste fragrant esra enter into the incision . If necessary , hold the roast with a string.
Heat oil in a pan , brown the meat on all surfaces . Remove it and set aside. Saute onions and the rest of the carrots cut into pieces the same size as the onions. Return meat to the pan , add the flavoring , pour the wine, sugar,salt and pepper .
Bring to a boil , cover tightly (you can use a lid or aluminum foil ) and put it all in the oven at minimum temperature . Let the meat cook in its own juice overnight ( not too long ) . When all the meat is tender, remove it and let it stand . Add remaining vegetables to cooking funds pan and cook until tender . Carve the meat and place on a bed of fragrant vegetables
